The modern app experience allows you to change and add column names right in the front-end. You want to change the default Title field in Custom Lists to something that matches the data you are capturing. So for example, if it’s a telephone list, you want it to be Name & Surname. If it’s a client database, then Company Name.

However, changing the Title field doesn’t change in the back-end of the list, nor in the form view.

So rather go into List Settings and rename the columns from there to syndicate the changes to the views and form in the front-end and get a consistent experience.
